Sambar is a staple food in south indian cooking...This is our home style of preparing sambar...(my mom used to add fenugreek...her style is different)...One sambar recipe for all...with venpongal,idly,dosa, rice...If for rice we add little bit of tamarind juice in sambar...For tiffin items we don't...Here's our simple sambar recipe...
Ingredients

Toor dhal | 1/4 cup |
Turmeric powder | 1/4 tsp |
Hing | 1/4 tsp |
Green chillies | 2 |
curry leaves | 1 sprig |
shallots | 6 or 7 |
carrot | 1 small |
Potato | 1 small |
Tomato | 1 medium |
Sambar powder | 2/3 tsp |
Cilantro chopped | 1 tblsp |
salt | to taste |
To Temper

Urad dal | 1 tsp |
Curry leaves | 1 sprig |

Hing/asfoetida | 1/2 tsp |
oil | 1 tblsp |
Method
Take a sauce pan and heat some oil in it...Add the chopped shallots,green chillies and curry leaves...Fry it till onion turn transparent and then add the chopped carrot and potato...
Fry the veggies for 2 or 3 time and then add chopped tomato and sambar powder(i added half home made sambar powder+sakthi masala sambar powder)...let it cook in medium flame till the tomatoes turn mushy...
Add a cup of water and close the lid and let it cook till the veggies turn soft...
Cook toor dal in pressure cooker for 5 or 6 whistles and in simmer for 5 minutes...Mash the dal and add it to the cooked veggies and give it a boil...You can also add some tamarind juice at this stage( i didn't)...
Switch off the flame and add the chopped cilantro and close the lid...so that flavor doesn't escape...
Temper with items in to temper table..let the onion turn brown well and add it to the sambar and immedietly close the lid...
