Carrot is one of my boy's favorite veggie..So I always try to sneak it in all recipes..This carrot coconut pancake is inspired from here and it came out well..Adding nuts in pancake also add on its nutrient value..Pecans will be the best choice with carrot, since I didn't had at hand I used almonds...'m preparing this for BM #57 under "Different Pancakes/ flatbreads"...I'm sending this to " Come join us for breakfast " event of cooking for all seasons...Do try this healthy pancake and enjoy..

chopped pecan/ almond | few |
Oil / Butter | 1 tblsp |

I have never tried adding vegetables or nuts to sweet pancakes, I usually add them to savory ones. Very interesting!
