This vatha kuzhambu recipe,which my mom makes is my favourite kuzhambu...Also it is easy to make..even with no onion or tomato it tastes soooo good...You can add any vathal you want...best option is sundaikaai vathal and manathakkali vathal...I added here cluster bean vathal and manathakkali...I have tried it even with vendaikaai vathal...With everything it tastes divine...Do try and enjoy...

Manathakkali vathal | 1 tsp |
Cluster bean(seeni avarai) vathal | 4 or 5 |
Gingely oil | 1 1/2 tblsp |
Hing/asafoetida | a pinch |
Mustard | 1 tsp |
Fenugreek seeds/vendhayam | 1/4 tsp |
Toor dal | 1 tsp |
Dry Red chilli | 1 or 2 |
Appalam | 1 broken |
Red chilli powder | 1 1/2 tsp |
Tamarind water | 1 cup |
Curry leaves | 1 sprig |
coconut ground | 2 tblsp |
Salt | as needed |
Jaggery | 1 tblsp |
Heat gingely oil in a sauce pan and add a pinch of hing to it...As it fries, add mustard,fenugreek seeds,toor dal, curry leaves and red chillies...
Then add a appalam pieces to the oil...After it get fried, add red chilli powder...It will form bubbles...
Immediately add the tamarind water..Don't let the red chilli powder burn...Add salt and jaggery to the tamarind water...Let it boil till raw flavor goes off...In another pan ,again heat some gingely oiland fry the vathals( I used manathakkali vathal and cluster bean(seeni avarai) vathal...)...
Add finely ground coconut to the oil and fry till good aroma comes...Add it to the boiling gravy and switch off the flame...
Top it with little gingely oil oil if needed...
