Chicken alfredo pasta is my favourite to go dish from restaurants...I have prepared it adding veggies too in this dish to make it a little healthier...I like this kind of white and creamy pastas than the spicier tomato sauce type pastas...My boy is also liking these type of pastas...Try this tasty recipe and enjoy...
Ingredients

Pasta | 1 1/2 cup |
Chicken cooked | 1/4 cup |
Carrot | 1 medium |
Beans | 4 or 5 |
Shallot | 4 or 5 |
Olive oil | 1 tsp |
Salt | as needed |
Garlic | 3 pods |
Butter | 1 tblsp |
All purpose flour/maida | 2 tblsp |
Whipping cream | 3/4 cup |
Egg yolk | 1 |
Pepper ground | 1 tsp |
Italian Seasoning | 1 1/2 tsp |
Parmesan Cheese | 1/4 cup |
Green Onion | for garnish |
Boil water and add salt and little olive oil it...Add the pasta and cook (as per packet instructions) for time based on type of pasta used...Drain water and keep aside...Reserve some of the drained water for later use...
Heat a sauce pan, add butter and melt it...Add the all purpose flour/maida and stir...
After maida gets cooked a bit, add whipping cream(or full fat milk if u r health conscious)....
Seperate the yolk of an egg and whip it...Add it to the sauce...Add the parmesan cheese...Cook till the sauce thickens...
After the sauce reached desired consisitency, add the cooked chicken pieces...
In a pan, heat some olive oil and add garlic...Fry till it become golden...Add the chopped veggies and shallots and ccoktill they become slightly soft...
Add them to the cooked pasta...Add the sauce too...Mix everything well...
Add required salt and pepper according to your taste...Add the italian seasoning...Reserve some sauce and pour on top while serving...
Use the reserves pasta boiled water if the pasta becomes dry after some time to make it little saucier...
