Cheese Puffs

I saw this cheese puffs recipe by Ina Garten in food network...You can see the original recipe here.This is a very easy recipe...It takes only 15 minutes baking time..and within preheating time of the oven we can prepare the dough.(10 minutes)....In the original recipe, she used 2 types of cheese..viz..gruyere and Parmesan....I used only mozzarella (low fat, part skim)cheese...These puffs goes well with tea..also it can be served as appetizer in parties...


Ingredients
  1. Milk                              -1/2 cup     
  2. Butter                            -1/2 stick(1/8 pound)
  3. Salt                               -1/2 tsp
  4. Pepper                         -1/8 tsp
  5. Nutmeg                        -a pinch
  6. All purpose flour/Maida-1/2 cup
  7. Eggs                             -2
  8. Mozzarella Cheese       -1/2 cup
Method
Preheat oven to 425 F...Take a heavy bottom pan and heat it with milk, butter,salt,pepper and nutmeg..Keep in medium flame and wait till the butter melts and milk boils..Milk will now get scalded..

Now dump the flour in the pan and stir well with a wooden spoon...Cook for 2 minutes in low flame..

Add the eggs and cheese in the dough and mix it well ,so that eggs are incorporated evenly ( i used the blender...can use food processor  or mixer jar)..

Line a baking tray with parchment paper(or aluminium foil) and spoon the dough in it using two spoons..
Keep it inside the oven and bake for 15 minutes or until golden brown..The dough will puff up nicely..
After the puff got golden brown spots, remove from  oven and let it stand for 5 minutes...
Thats all..now the puffs are ready..Enjoy with hot masala tea...
