Nandu Omelette is one among the specialities of Madurai amma mess, a famous non veg hotel in madurai...Visited there once during my college days...They had many varities in omelette itself...let alone the main dishes...chicken omelette,mutton omelette,kadal omelette(seafood omelette) and crab omelette...I made crab masala today, and with the extra claws flesh, made this omelette...everyone in our home liked it a lot...Do try and enjoy..

Cooked crab/nandu | 1/4 cup |
Eggs | 2 |
Onion | 1/2 small |
Green chilli | 1 |
Curry leaves | 1 sprig |
Oil | 2 tsp |
Salt | as needed |
Pepper | as needed |
Steam cook crabs for 5 minutes and crack open the shells and take out the flesh alone and shred them...In a pan heat some oil and saute onion, green chilli and curry leaves...
Add sauteed onion to the crab and crack 2 eggs....Add required salt and pepper(optional, since green chilli is there)...
Mix well using a fork and pour as omelette...Cook on both sides...Garnish with choppen green onion...I made 3 omelettes with this recipe(small ones)....
