Chicken Fried Rice



Chicken Fried rice became my favourite during my college days...My brother use to buy this for me from chinese restaurant...I have made slight changes to the original recipe(here)...U can add veggies u want like celery,different colored capsicums,green peas...i added the veggies i had for now...Bored of biriyanis..Make this simple fried rice and enjoy...

Ingredients

Soya sauce1 tsp
Vinegar
1 tsp
Pepper powder1 tsp
Corn starch
1 tsp
Red Onion

Carrot
1 medium
Cabbage
1/4 cup shredded
Capsicum
1/4 cup
Garlic
2 pods
Egg
2
Cooked Basmti Rice
2 or 2 1/2 cups
Salt
to taste

Method
Marinate chicken(cut into small pieces) with 1/2 tsp soya sauce,1/2 tsp vinegar,1/2 tsp pepper powder and cornstarch for 10 minutes...Cut the veggies and onion...

In a pan, take some oil and fry the chickens till they are cooked through...Drain in paper towel..

In the same pan, add the onion...fry for a minute and then add carrot...fry till carrot starts turning pale..Then add the capsicum and cabbage and fry for few seconds and switch off....

Keep veggies aside....Take a broad enough pan to handle rice, heat olive oil and add garlic...

Crack 2 eggs in it and scramble them...Then add the cooked chicken and veggies to it and mix well...Add pepper powder, 1/2 tsp soy sauce and 1/2 tsp vinegar and mix well....check salt...

Add the cooked rice to the pan and mix well...Fry in high flame for 2 minutes...
