Fruit Cake


Fruit cake is my mom's favourite type of cake...I have made it a couple of times...every time with the ingredients i have at hand at that time...one time without egg(for mom) added a banana instead of egg...every time it came out good..This is Alton Brown's recipe..You can find it here...You can add
the dried blueberries, raspberries,almonds, walnuts,currants,etc...All the ingredients here are healthy too..apricots are excellent source of iron other than dates...and we add ginger,dry ginger, cloves and cinnamon too...You can try with brown sugar too..it will become still more healthy ..Do try and enjoy christmas...Happy christmas everyone...enjoy...

Sugar1 cup
Butter5 ounces
Water1 cup
Baking Powder1 tsp
Baking Soda1 tsp
Eggs2
Roasted pecan1/2 cup

Method
In a microwave dish, take 1 cup each of golden raisins, cranberries,chopped dates and chopped apricots...

Take zest of a lemon and add it to the dry fruits...

Add chopped ginger, take the juice of the zested lemon and add a cup of water...Microwave this for 5 minutes,to rehydrate the fruits..else you can soak it overnight..

Take ther cinnamon,cloves and dry ginger and powder them..Make 1 cup puree of apple...

In a wide vessel, add butter,sugar,apple puree and spice powder and add the dry fruits to it. Heat it until it comes to a boil and then simmer for 5 minutes..

Let it cool down for 15 minutes (or more if u have time)...Then add the sifted mixture of all purpose flour,baking powder and baking soda to it...Mix well...Add 2 eggs one by one and mix well...

Preheat oven to 325 F...Add chopped pecan to it and roughly mix to distribute...Line baking dish with parchment paper,or grease it well...

This recipe gave me 2 loaves...Divide and shape as you wish..Bake in 325 F for 1 hour...Check weather it's done by inserting a toothpick...if it comes out clean,then it's done...You will know from the nice aroma that fills the house...

Cut as u wish and store in airtight container...Tastes best after a week...
