Thengai paal sodhi is a thing which I make when we got bored of sambars and puli kuzhambu varieties...Also we can add lots of veggies in this..Carrot,potato,beans, cluster beans,cauliflower,green peas,shallots,bell peppers (capsicum) and spring onions...I added the veggies I had at hand...It's a quick and easy recipe...goes well with rice and pulavs...also with appam and idiyappam...

Mix Veggies(carrot,potato,beans clusterbeans,spring onion) | 1 cup |
Green chilli | 2 or 3 |
Ginger | 1 inch |
Garlic | 2 or 3 pods |
Red onion | 1 medium |
Coconut milk(thick) | 1 1/2 cup |
Jeera/ Cumin | 2 tsp |
Ghee | 1/2 tsp |
Curry leaves | 1 sprig |
Salt | as needed |
Method
Fry the veggies in little oil in a sauce pan for 2 minutes and then add water and little salt and let the veggies cook soft...
