Thengai Paal Sodhi / Coconut Milk Gravy



Thengai paal sodhi is a thing which I make when we got bored of sambars and puli kuzhambu varieties...Also we can add lots of veggies in this..Carrot,potato,beans, cluster beans,cauliflower,green peas,shallots,bell peppers (capsicum) and spring onions...I added the veggies I had at hand...It's a quick and easy recipe...goes well with rice and pulavs...also with appam and idiyappam...

Ingredients

Mix Veggies(carrot,potato,beans
clusterbeans,spring onion)
1 cup
Green chilli2 or 3
Ginger1 inch
Garlic2 or 3 pods
Red onion1 medium
Coconut milk(thick)1 1/2 cup
Jeera/ Cumin2 tsp
Ghee1/2 tsp
Curry leaves1 sprig
Saltas needed

Method

Fry the veggies in little oil in a sauce pan for 2 minutes and then add water and little salt and let the veggies cook soft...

In a frying pan, heat oil and saute green chilli,ginger garlic and onion and 1 tsp cumin seeds...Let it cool and make a paste out of it...

Add it to the cooked veggies and cook for 2 minutes....then add coconut milk and switch off the flame...

Add lemon juice and temper cumin in ghee and add on top...Garnish with chopped curry leaves...
