Chicken kothu parota is one of my hubby's favourite dish...I usually prepare this when I have leftover chicken curry...This time i have prepared from scratch...Both ways it tastes good...Adjust the spice level according to your taste...Prepare just before eating and enjoy hot...That way it tastes very nice...Do try and enjoy...

Parotta Cooked | 6 |
Chicken without bone | 1/4 cup |
Cinnamon | 1 inch |
Cardamom | 1 |
Cloves | 2 |
Bay leaves | 1 |
Ginger garlic paste | 1 1/2 tsp |
Green chilli | 1 or 2 |
Onion | 1 medium |
Tomato | 1 small |
Turmeric powder | 1/2 tsp |
Red chilli powder | 1 tsp |
Coriander powder | 2 tsp |
Egg | 1 |
Cilantro | 1/8 cup |
Mint | 1/8 cup |
Curry leaves | 1 sprig |
Oil | 2 tsp |
Salt | as needed |
Chop chicken into small pieces and clean it...Mix red chilli powder, 1/2 tsp ginger garlic paste and salt with the cleaned chicken pieces...Heat little oil in a kadai and pan fry the chicken pieces.....
Set the chicken aside...In the same kadai,again heat some oil and temper with cinnamon, cardamom,cloves and bay leaves...
Addd slit green chillies,ginger garlic paste and finely chopped onion...After onion turns light brown, add chopped tomatoes and fry...
Add turmeric powder, red chilli powder and coriander powder and cook till raw smell goes off...(If you are adding chicken gravy later adjust accordingly)....Add the chopped parotta pieces and mix well...Add salt if needed...
Add a egg upon the parotta and salt and pepper required for the salt...Mix well and cook till egg gets cooked well...(You can add little chicken gravy with chicken here if u want)....
Add the roasted chicken pieces and mix...Finally add the chopped cilantro leaves,curry leaves and mint leaves...
