Kara Kuzhambu / Kathirikai Kara Kuzhambu


Kara kuzhambu can be done adding veggies like brinjal or drumstick(murungaikaai) or as such as plain kara kuzhmbu...You can also add vengaya vadagam in plain version or with veggies...I usually prepare the powder bit more and use it to prepare gravy 2 times (not more than that since freshly ground will be better)...will be useful for busy weekday mornings...can be prepared very quickly...Do try this spicy ,tangy kara kuzhambu...


Ingredients

Brinjal3 or 4
Gingely oil1 tblsp
Mustard1/4 tsp
Urad dal1/4 tsp
Curry leaves1 sprig
Turmeric powder1/2 tsp
Tamarind water1 cup
Jaggery1 generous pinch
Saltas needed
To roast and grind

Rice1 tblsp
Dry red chillies3 or 4
Coriander seeds1 1/2  tsp
Cumin/Jeera1 tsp
Fenugreek /Vendhayam1/4 tsp
Toor dal1 tblsp

Method

Dry roast rice, coriander, dry red chillies, cumin(jeera), toor dal,fenugreek(vendhayam) one by one seperately and let it cool a bit...Grind as a powder...soak tamarind in water...

Heat gingely oil in a sauce pan and temper with mustard, urad dal,pinch of hing and curry leaves...Add chopped brinjal (or drumstick) and saute for a minute...

Add the tamarind water,turmeric powder,jaggery and salt...Let it boil and the veggie get cooked...After gravy becomes slightly thick (or reduced to half) add the ground powder and mix...Switch off the flame....

You can add fried onion vadam on top if you wish..and a splash of gingely oil enhances the taste...
