Aviyal


Aviyal is one of my favorite side dish for rice dishes..A simple to prepare and a tasty dish, perfect for the weather here...Also we can use up all the veggies at hand, before going to shopping..Needless to say, it's a very healthy and satisfying dish ...Goes well with adai too..Give it a try and enjoy..

Ingredients

Mix veggies
(Drumstick,Raw mango,Plaintain,
Carrot, Beans,Cluster beans,etc..)
1 1/2 cup
Coconut1 tblsp shredded
Green chili1 or 2
Jeera/cumin seeds1 tsp
Yogurt/curd1/4 cup
Coconut oil2 tsp
Saltto taste

Method

Cut veggies into vertical strip shape bite size pieces...add torn curry leaves..Boil in water with salt just to immerse the veggies..Take coconut, jeera and green chili in a mixer jar..

Make a fine paste out of them and add to curd/yogurt and mix well..After the veggies are cooked soft, add this paste to it and give a boil..Let it thicken a bit if you want..Temper with mustard, urad dal and curry leaves in coconut oil...
