Carrot chutney/ Side dish for Idly Dosa




Carrot chutney is a chutney which i have never tasted before marriage....I found it a healthy way to add veggies in way of chutney too...soon will post cabbage chutney and beetroot chutney...which all tasted good and i liked these different tastes of chutneys...kids will love these chutneys since they have a natural slight sweet taste to them...Try this yummy  and healthy chutney....

Ingredients

Carrot2 small
coconut slices1/8 cup
Red onion1 small
Garlic2 or 3
Dry red chillies2 or 3
Tomato1 small
Saltto taste

To Temper

Mustard1 tsp
Urad dal1 tsp
oil1 tsp
Curry leaves1 sprig
Method
Take a pan and heat some oil in it...Add red onion,garlic cloves and red chillies and fry till onion becomes transparent...

Chop the carrots and fry them until they become lightly pale...Fry the tomatoes for 2 minutes...Let them all cool down a bit before grinding..

Take coconut slices in the mixer,add the cooled ingredients and add required salt...Grind them into a smooth paste...

Temper with mustard,urad dal and curry leaves...

We had it dosa...goes well with dosa as well as idlies....
