My MIL taught me this way of making okra poriyal...She makes so many dishes in little time and in a easy way...she's always cool in the kitchen, yet everything will be done in time...She used to tell lot of tell tips and tricks...This recipe is very simple with less ingredients...As u all know, okra is very good for brain development....Try it and enjoy...
Ingredients

Okra/Vendaikkai | 1/2 lb |
Sambar Powder | 1 tsp |
Salt | to taste |
To Temper
Ingredient | Measurement |
Mustard | 1 tsp |
Urad dal | 1 tsp |
Gingelly oil | 1 tblsp |
Curry leaves | 1 sprig |
Method
Wash and pat dry okra before cutting...cut okra as thin slices....Cut holding 3 or 4 okra together,so that we can cut fast...Take a pan and temper with mustard, urad dal and curry leaves...
Add sliced okra to the pan and fry for 2 minutes in medium flame...then add salt and sambar powder and mix lightly....
Keep flame in medium low and let it cook....Don't disturb it...Stir only occassioally...Total time it will take around 30 minutes....
If we stir more,okra will become gooey....After 30 minutes it will no longer be gooey at all...If needed add little bit oil in between...If u want u can add shredded coconut at end and fry for a minute...I didn't add coconut...Without sambar powder also we can prepare...add green chillies while tempering...
