Chettinad Chicken Kuzhambu


Chettinad chicken curry is a famous chicken gravy from south indian cuisine all over the world...I saw this recipe in a cookbook which my MIL gave me..I slightly changed the recipe to prepare it easily..and it came out awesome..Do try and enjoy..

Ingredients

Chicken with bone
1/2 lb
Turmeric powder
1/2 tblsp
Dry Red chilli 
3 or 4
Coriander seeds1 tsp
    Pepper
  1 tsp
Fennel seeds
 1 tsp
Cinnamon1 inch
Cardamom
Cloves3 or 4
Star anise
Red onion1
Tomato1
Ginger garlic paste1 tsp
Salt
as needed
Curry leaves1 sprig
Cilantrofor garnish
oil
2 tsp

Method

Dry roast cinnamon,clove,cardamom,star anise, pepper, fennel seeds,coriander seeds and dry red chillies..Roast coconut slices slightly...

Grind everything together into a fine paste and keep aside..In a pressure pan, heat some oil and add sliced onions and saute till transparent..Add ginger garlic paste and fry..

Add chopped tomatoes and saute till they become mushy..Add cleaned chicken pieces, turmeric powder and salt...Add required water and pressure cook for 2 whistles..

After pressure settles, open the cooker and add the ground paste..Check salt..Let it boil for 3 to 4 minutes..Add torn curry leaves...

Add chopped cilantro and switch off the flame..or until cook till you get desired consistency..I made it little watery for Idli...Give little standing time before serving..
